This cut is commonly found in California but don’t be surprised to find them at your local butcher shops and Costcos. Chimichurri recipe: the last word on BBQ sauce

I wish Argentina was a little closer. Their style of barbecue, asado, has long been the blueprint of many backyard bbqs at Casa Khan. For years I relied on the food processor and red wine vinegar for my benchmark chimichurri recipe. Then one fine day I found myself without red wine vinegar and too lazy to pull out the food processor. I turned to plain old white vinegar and my chef’s knife. The result was a more balanced chimichurri recipe with better texture.

I realize comparing American BBQ sauce to chimichurri is apples to oranges but man do I reach for it so much more often when it comes to my grilling adventures. The next time you are cooking up steak and sausages, try this recipe out. Maybe even for 4th of since it’s around the corner

This isn’t the first time I have made a coffee rub steak on the grill. But in the age of the Coronapocalypse, my grilling has kicked into overdrive. The age of #selfquarantine has also got me looking at a big fat shelf of cookbooks I have collected over the years that I just don’t crack open often enough. Well that is all about to change. I’m starting a new chapter of Bang for your Burger Buck: Cook the Book, where I test drive recipes and share the results.

Pietro’s NYC ~ an old school Italian steak and pasta experience

the bucks: $26, $106, and $16 respectively, plan on $100 a head with a stiff drink in the mix
the full nelson: historic NYC steakhouse that twists the traditional line up with pastas, parms and a bacon laced Caesar salad.

Pietro’s has been on my radar since 2007, when I came across a tasty blog called Beef Aficionado that sang the praises of an old school Italian Steakhouse in Midtown Manhattan. I love steak. I love to make it at home and I love to order it at restaurants. And I love the idea of a steakhouse. But, being the thrifty foodie that I am, time and time again I find myself disappointed in the Steakhouse experience. I mean, in the end of the day it just ain’t that big of a deal for me to buy a pricey steak at a top shelf butcher and still spend a fraction of what I would at a steakhouse. Yet I keep going back and dropping more than I probably should for a beefy over the top dinner. Well, that you will certainly find at Pietro’s my friends.
